Аннотация

Nowadays healthy eating is of importance, therefore the relevance of this study is due to the achievement of the following objective, i.e. the development of kvass technology. Kvass, prepared on the basis of wheat malt, fermented with the help of yeast and lactic acid bacteria, has some healthy properties.
