Аннотация

Currently an interest of the practical application of technologies with use of soy protein, being the most important in the creation of new food products, is increasing worldwide. The aim of the research is to increase the nutritional value of soy "milk" and to create a dietary product of mass consumption in the form of yogurton on its basis.
