Monitoring the processes of heat treatment of liquid products based on the methods of the theory of entropy potentials
Annotation
A new approach to monitoring the process of pasteurization is discussed. It is based on the conception of entropy potentials. Such approach makes it possible to predict the tendency of temperature changes and warn about a possibility of defective produce.
