Development of the process and a device for deboning costal meat
Annotation
A number of promising new technologies and engineering solutions aimed at intensification and automation of waste-free and environment-friendly costal meat deboning processes require scrupulous development of appropriate structural and physical models as well as adequate and correct mathematical description of the said process and equipment. The authors offer a new technique to separate meat from costal bones using a special double-bladed knife for making cuts in the middle of each rib.
