Data on optimization of a way of receiving the raw materials containing carbohydrates by a method of hydrolysis are provided in article. Research objective was the increase in the content of sugars in a hydrolytic mixture of potatoes in comparison with existing way. Optimization is made on the basis of the mathematical models received by a method of complete factorial experiment.
