Vitamin composition and biological value of altai dairy drink chegen

Annotation

Nowadays, it is insufficient to provide the desired organoleptic properties and food safety. Innovative products should have therapeutic and preventive action to prevent the occurrence of diseases caused by adverse environment influence. Special attention should be given to national fermented drink from Altai so called chegen, technology of which based on the use of symbiotic starter culture. Chegen among other national dairy products can be recommended as a valuable therapeutic and prophylactic drink at tuberculosis, disorders of secretory-motor function, diseases of the digestive tract and in the recovery period. The paper presents experimental data of vitamins and amino acids composition of the Altai dairy drink chegen, coefficient of amino acids score differences and biological value compared with kefir.
