The food sector consumes a significant amount of resources. In the food and beverages account for about 15-30% of the total load on the environment [1]. Food is often less resource-intensive than the production of other industrial products, but in this industry increased complexity in the structure of production and transport, which leads to a higher resource consumption of the food chain as a whole. [8] Hot Spot Analyses (HSA), developed by the Wuppertal Institute, Germany, is a tool for preliminary assessment, which focused on the need for sustainable decision-making processes that contribute to the definition of priority areas («hot spots») in complex value chains and adopt effective management measures in companies.
