Research of shrimps drying process

Annotation

Experimental unit for drying of material and experiments carrying out method have been exhausted. Data for kinetics of peeled shrimps and headless shrimps drying depending on different process parameters have been obtained. During the process of vacuum drying the influence factors are: the temperature of heating plates and pressure inside the unit. By means of planning experiment there were obtained their interconnection with the dehydration rate of shrimps in the mode of the second order polynomial.
