Estimation of biological value of fibers in import and domestic meat of different kinds after long refrigerating storage.

Annotation

      Estimation of biological value (amino-acid it is fast,  indexes, белamino-acid protein– a quality indicator) fibers of meat of different kinds import and a domestic production in our researches has shown that in the course of long refrigerating storage the maintenance of replaceable amino acids decreases for 10-15 % (for 2 years of refrigerating storage), and the maintenance of irreplaceable amino acids increases in the proportional relation that leads to albuminous  concentrated  meat.
