Influence of extracts of wild-growing fruits and berries on the color of minced semi-finished products from poultry

Annotation

In article was studied the  influence of  ethanolic extracts of  wild-growing fruits and berries on color of meat products. The optical density, titrable  and active acidity of fruits and berries extracts, the content of anthocyanins in the fruits and berries extracts, spectral characteristics of a product with partial replacement of nitrite of sodium by extracts of fruits and berries were determined.
